Swiss Bratwurst Melt
Serves 4:
2 Tablespoons Margarine> 4 Teaspoons flour
1/4 Teaspoon Salt
1/4 Teaspoon Dry Mustard (Bauer's)
3/4 Cup Milk
3/4 Cup Shredded Swiss Cheese (Emmentaller is preferred - #1384)
1 8 oz. Can Sauerkraut (Both our Henstenberg and Kruegermann Sauerkrauts are good)
1 lb Swiss Veal Brats (#1004)
4 Large Slices Toasted Pumpernickel Bread (#9013) or bread of your choice
4 Slices Tomato
4 Green Pepper Rings

Melt margarine in a small saucepan. Stir in flour, salt, dry mustard, and milk at the end. Cook and stir until mixture is thickened and bubbly. Stir in Swiss cheese until melted; cover and keep warm. Heat sauerkraut in a small saucepan. Meanwhile, halve the bratwurst lenthwise; place cut side down on unheated broiler pan or baking sheet. Broil 3-5 inches from heat for 3 minutes. Drain the sauerkraut. To make each sandwich, place 2 bratwurst halves on a bread slice. Top with a fourth of the hot sauerkraut and a tomato slice; spoon a fourth of the cheese sauce over. Garnish with a green pepper ring.
